Ingredients

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts cut into strips
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 medium red bell pepper sliced
  • 1 medium green bell pepper sliced
  • 1 medium yellow onion sliced
Rice
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp lime juice
  • 1 tbsp fresh cilantro chopped
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 medium avocado sliced
  • 1 cup salsa

Method

Cook the Rice
  1. Rinse the rice under cold water until the water runs clear. In a rice cooker, combine the rice and water. Cook according to the rice cooker instructions.
  2. Once cooked, fluff the rice with a fork and stir in lime juice and chopped cilantro.
Prepare the Chicken and Vegetables
  1. In a large skillet, heat olive oil over medium-high heat. Add the chicken strips and season with chili powder, cumin, garlic powder, onion powder, and salt.
  2. Cook the chicken for about 5-7 minutes, until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Sauté for 5-7 minutes until they are tender.
  4. Return the chicken to the skillet and mix with the vegetables. Cook for an additional 2 minutes.
Assemble the Bowls
  1. In serving bowls, layer the cooked rice, followed by the chicken and vegetable mixture.
  2. Top with shredded cheese, sour cream, sliced avocado, and salsa as desired.
