Ingredients

Spaghetti Squash
  • 1 medium spaghetti squash halved lengthwise and seeds removed
Filling
  • 2 cups fresh spinach chopped
  • 1 cup mushrooms sliced
  • 1 cup cream cheese softened
  • 1/2 cup grated Parmesan cheese plus more for topping
  • 1 clove garlic minced
  • 1 teaspoon olive oil for sautéing
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method

Prepare the Spaghetti Squash
  1. Preheat the oven to 400°F (200°C). Place the halved spaghetti squash cut-side down on a baking sheet and roast for 30-35 minutes until tender.
  2. Once cooked, let it cool for a few minutes, then use a fork to scrape the flesh into spaghetti-like strands.
Make the Filling
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add sliced mushrooms and cook for 5-7 minutes until softened. Stir in chopped spinach and cook until wilted.
  3. In a mixing bowl, combine the sautéed vegetables with cream cheese, Parmesan cheese, salt, and pepper. Mix until well combined.
Stuff the Squash
  1. Fill each spaghetti squash half with the creamy spinach and mushroom mixture, pressing down gently to pack it in.
  2. Sprinkle additional Parmesan cheese on top of the stuffed squash.
Bake and Serve
  1. Return the stuffed squash to the oven and bake for an additional 10-15 minutes until heated through and the cheese is bubbly.
  2. Remove from the oven, let cool slightly, and serve warm.
