Ingredients

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
Rice and Beans
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • 1 can black beans rinsed and drained
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 small red bell pepper diced
  • 1 clove garlic minced
Toppings
  • 1 avocado sliced
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup sour cream optional
  • 1 lime cut into wedges

Method

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Add chicken pieces and toss to coat. Cover and marinate for at least 15 minutes.
Cook the Rice and Beans
  1. In a medium saucepan, heat olive oil over medium heat. Add diced onion and red bell pepper, and sauté until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Stir in rice, chicken broth, cumin, and paprika. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
  4. Once cooked, stir in black beans and heat through.
Cook the Chicken
  1. In a large skillet over medium-high heat, cook the marinated chicken for about 5-7 minutes, or until fully cooked and browned.
Assemble the Bowls
  1. In serving bowls, layer the rice and beans, top with cooked chicken, and garnish with sliced avocado, cilantro, sour cream, and lime wedges.
