Ingredients

Marinated Chicken
  • 4 pieces chicken breasts boneless and skinless
  • 1/2 cup Korean BBQ sauce store-bought or homemade
  • 1 tablespoon soy sauce for extra flavor
  • 1 tablespoon sesame oil for marinating
Sandwich Assembly
  • 4 buns burger buns preferably brioche
  • 1 cup shredded lettuce for crunch
  • 1 medium tomato sliced
  • 1/2 cup pickled cucumbers for tanginess
  • 1/4 cup mayonnaise for spread
  • 1 teaspoon Sriracha for a spicy kick

Method

Marinate the Chicken
  1. In a mixing bowl, combine the Korean BBQ sauce, soy sauce, and sesame oil.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
Prepare the Sandwich
  1. While the chicken is grilling, mix the mayonnaise and Sriracha in a small bowl to create a spicy mayo.
  2. Once the chicken is cooked, let it rest for a few minutes before slicing.
  3. Toast the burger buns on the grill for about 1-2 minutes until golden.
  4. Assemble the sandwich by spreading spicy mayo on the bottom bun, adding lettuce, sliced tomato, grilled chicken, pickled cucumbers, and topping with the other half of the bun.
