Ingredients

Skirt Steak
  • 1 pound skirt steak trimmed and patted dry
  • 2 tablespoons olive oil for marinating
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 cloves garlic minced
Couscous Salad
  • 1 cup couscous uncooked
  • 1 cup water for cooking couscous
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
  • 1 lemon lemon juice freshly squeezed
  • 2 tablespoons olive oil for dressing
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method

Marinate the Steak
  1. In a mixing bowl, combine olive oil, minced garlic, salt, and black pepper. Add the skirt steak and coat well. Let it marinate for at least 15 minutes.
Cook the Couscous
  1. In a pot, bring water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
Prepare the Salad
  1. In a large mixing bowl, combine the fluffed couscous, cherry tomatoes, cucumber, red onion, parsley, mint, lemon juice, olive oil, salt, and black pepper. Toss to combine.
Grill the Steak
  1. Preheat the grill to medium-high heat. Grill the marinated skirt steak for about 4-5 minutes on each side, or until it reaches your desired doneness. Use a meat thermometer for accuracy.
Serve
  1. Let the steak rest for a few minutes before slicing against the grain. Serve the sliced steak on a platter alongside the lemon herb couscous salad.
