Ingredients

Dough
  • 1 cup warm water about 110°F
  • 2 tablespoons granulated sugar
  • 1 packet active dry yeast
  • 4 cups all-purpose flour plus extra for dusting
  • 1 teaspoon salt
Baking Solution
  • 1/2 cup baking soda
  • 10 cups water for boiling
Topping
  • 1 large egg beaten
  • 1 tablespoon coarse sea salt for sprinkling

Method

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes.
Shape the Pretzels
  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 24 inches long, and shape into a pretzel.
Boil and Bake
  1. In a saucepan, bring 10 cups of water to a boil and add baking soda.
  2. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on the baking sheet.
  3. Brush the tops with beaten egg and sprinkle with coarse sea salt.
  4. Bake in the preheated oven for 12-15 minutes until golden brown.
